Birthday Bean Salad

As promised, here is the recipe for the bean salad I made at Aiman’s party.  It was so good.  It is definitely “bean-y,” so if you aren’t into beans, just skip over this post, you will hate this salad.  Also, this salad is made entirely of beans.  Ahem.  This is a high-class family blog so I won’t go into details, but … yeah … the salad is made of beans.  But it is really good, so just make it!

The recipe is a slight modification of one I saw in the Silver Palate Cookbook.  I really love that cookbook, its got great basic meals that are pretty easy to prepare.

You Will Need:

For the Salad

1 can (16 ozs) each of garbanzos (chickpeas), white kidney beans, red kidney beans, baby lima beans and black-eyed peas (or really any other variation of different kinds of beans – I couldn’t find baby lima beans or black eyed peas so I picked up some more white and red kidney beans to total 5 cans)

1 pound fresh green beans, cooked

1 cup chopped scallions (green onions)

1/2 cut chopped italian parsley

For the Dressing

1 heaping teaspoon dijon mustard

1/3 cup red wine vinegar

1 tablespoon sugar

1 tablespoon choppen garlic

1 cup olive oil

salt and pepper to taste

To Assemble:

1.     Drain and rinse very well the canned beans (Seriously – drain the crap out of them.  Rinse them until the water runs clear)

2.     Cut the green beans into two inch lengths

3.    Toss the canned and fresh beans together in a large bowl

4.  Make dressing:

Combine the dijon mustard, vinegar, sugar, garlic, salt and pepper in a food processor.  Process for a few seconds

With the motor running slowly pour in the olive oil

Salt and pepper further to taste

5.  Pour dressing on bean mixture and toss lightly to coat

6.  Sprinkle on the scallions and toss again

7.  Refrigerate overnight (this is key – it is so much better the next day)

8.  Garnish with chopped parsley

This makes enough to feed an army (the recipe says 10-12 portions, but I think it is more than that).  We had a lot left over and I ate it straight out of the tupperware for days.  It seriously got better and better every day.  Enjoy!
